Quality Speed Consistency

I’ve been nurturing a restaurant job for more than a year now. And I´ve had an image that I kept coming back to, that of me chopping spring onions for hours on end.
Well, 8 hours to be more precise. All this reminded me, and I’m very sure it might have also reminded you, of Alison Knowles as she was making her salad, minus the aim of making said salad. Or of Chantal Akerman´s Jeanne Dielman slowly pealing potatoes. Then of Marina Abramovic meets Martha Rosler in the kitchen… or so I´ve been told. And it´s all of that and it´s none of that at the same time, as each interpretation builds upon the history of such actions, and always introduces other elements.
